Traditional Guacamole


What you’ll need:

  • 2 Hass Avocados, ripe but firm, cut in 2” pieces
  • 2 oz. White Onion, cut into 1” pieces
  • 1 Garlic Clove
  • ½ Medium Beefsteak Tomato, cut in 4 pieces
  • Juice from ½ Lime
  • 15 Cilantro Leaves, whole
  • ½ Tsp Kosher Salt
  • Hot Sauce to taste

Avocado & prawn wrap


Ingredients
• 1 Kingsmill 50/50 Wrap
• 1 pinch of black pepper
• ½ avocado, sliced
• 1 handful of cooked king prawns

Country Chicken Salad ( 4 peoples )

What you’ll need

  • 16 oz. Boneless Cooked Chicken, cut in 1” pieces
  • ½ Small Onion, quartered
  • 1 Celery Stalk, cut in 1” pieces
  • 1 Cup Low Fat Mayonnaise
  • 1 Tsp Country Dijon Mustard
  • ½ Tsp Dried Tarragon
  • 1-2 Tsp Fresh Lemon Juice
  • 10 Sprigs Curly Parsley
  • Salt and fresh ground Black Pepper to taste
  • 1 Pkg Mixed Greens, washed and cut
  • 1 Beefsteak Tomato, sliced
  • 1 Small Cucumber, sliced
  • 2 Cups Red Seedless Grapes
  • 4 Slices Multigrain Bread

Hot & Sour Salmon with Greens ( 6 peoples )


  • 2½ pounds baby bok choy or bok choy, stem ends and leaf tips trimmed
  • 8 whole scallions, ends trimmed, cut into thin slices on the diagonal
  • ¼ cup fresh ginger cut into very thin julienne shreds
  • 6 salmon steaks, about 6 ounces each
  • 3 cups cooked brown rice

DRESSING

  • 3 tablespoons reduced-sodium soy sauce
  • 2 tablespoons Chinese black vinegar or balsamic vinegar
  • 2 tablespoons sugar
  • 1 tablespoon minced garlic

Apple Crisp ( 8 peoples )


  • 1/ 3 cup old-fashioned rolled oats
  • ½ cup whole-wheat pastry flour
  • ¼ cup sliced almonds
  • 2 tablespoons toasted wheat germ
  • ¼ cup packed dark brown sugar
  • ¾ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1/ 8 teaspoon salt
  • 1 tablespoon cold unsalted butter, cut into pieces
  • 2 tablespoons canola oil
  • 1 to 2 tablespoons cold water

INGREDIENTS FOR THE FILLING

  • 3 large Rome or Empire apples (about 1½ pounds)
  • 3 medium Golden Delicious apples (about 1 pound)
  • 3 medium Granny Smith apples (about 1 pound)
  • ¼ cup fresh lemon juice
  • 3 tablespoons pure maple syrup
  • 2 tablespoons whole wheat pastry flour


Honey-Crisp Oven-Fried Chicken ( 6 peoples )


  • 6 skinless, bone-in chicken thighs (about 2 pounds)
  • 2/ 3 cup low-fat buttermilk
  • 4 cups whole-grain cereal flakes
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon cayenne pepper
  • Olive oil cooking spray
  • 2 tablespoons honey

Lemon Garlic Chicken with Raisins ( 4 peoples )


  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 4 skinless, boneless chicken breasts
  • 1/4 cup fresh lemon juice
  • 1/2 teaspoon freshly grated lemon zest
  • 2 cups sliced carrots
  • Salt and freshly ground pepper
  • 3 cups hot, cooked brown rice
  • 1/2 cup Sun-Maid Natural Raisins
  • 2 tablespoons chopped fresh parsley or cilantro

Crunchy Raisin Bread French Toast ( 4 peoples )


  • 3/4 cup egg substitute or 3 eggs
  • 1/3 cup skim milk
  • 1 teaspoon vanilla
  • 2 tablespoons powdered sugar
  • 1/8 teaspoon ground nutmeg
  • 2 cups whole grain wheat and barley cereal or coarsely crushed bran flakes
  • 8 slices Sun-Maid Raisin Bread
  • Powdered sugar for topping, (optional)

Raita 2 cups ; Tzatziki 2 cups


Raita

  • 1 cup cucumber, chopped                                         
  • ½ cup tomato, chopped
  • ¼ cup red onion, chopped
  • 1 cup yogurt
  • 1 tsp cumin powder
  • ½ tsp cayenne powder
  • 2 tbsp fresh cilantro, chopped
  • salt and pepper

additions

  • 1 tbsp ginger, grated
  • 2 tbsp mint
  • ¼ cup chickpeas
  • cooked spinach


Peanut Sauce ( 1 cup )



  • 1 jalapeño or other chili, finely chopped
  • (or 2 tbsp chili paste)
  • 3 cloves garlic
  • 1 shallot (or equivalent of any onion)
  • cooking oil
  • 1 tsp turmeric (optional)
  • ½ to 1 cup coconut milk
  • ½ cup sugarless peanut butter
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar (optional)
  • ½ tsp sesame oil

Peach Coffee Cake ( 12 pieces )


  • 6 peaches, pitted and cut into 8 slices each
  • 1 tsp cinnamon
  • ½ lemon, juiced
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • ½ lb unsalted butter (2 sticks), at room temperature
  • 11/3 cups brown sugar
  • 1/8 tsp salt
  • 2 large eggs
  • 1 tsp vanilla

Coconut Chocolate Cookies ( 40 pieces )


  • 2/3 cup shaved, unsweetened
  • coconut, toasted
  • 1½ cups chocolate chips
  • ½ lb unsalted butter (2 sticks)
  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1½ cups dark brown sugar
  • 2 eggs
  • 2 tsp vanilla

Sandwich Rings ( 5 pieces )


  • 5 slices of Kingsmill Soft White bread
  • 1-2 teaspoons of blueberry jam
  • 1 slice of tomato
  • 1 teaspoon of black olive tapenade
  • 1 slice of smoked salmon
  • 2 teaspoons of egg mayonnaise mixed with 1 teaspoon grated Cheddar cheese
  • 2 slices of cucumber
  • 1 small bunch of cress or micro salad leaves

Flour Tortillas


1¼ cups all-purpose flour
1¼ cups whole-wheat flour
2½ tsp baking powder
1 tsp salt
1/3 cup clarified butter or lard
1 cup hot water

Chorizo and White Bean Ragu ( 3 cups)


  • 1 tbsp butter or vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, finely chopped
  • 1 tbsp jalapeño, finely chopped (optional)
  • ½ lb fresh chorizo, casing removed
  • 1½ cups canned or
  • fresh tomatoes, puréed
  • 1½ cups butter beans, navy beans, or cannelini beans
  • salt and pepper
